Who loves cast iron? Agree with everything in this video EXCEPT the cast iron wok I use is only 3 1/2 lbs. so it's light and heats up fast! Can't tell you how many folks who had one of those 10-12 lb. cast iron woks needed 2 people to lift the darn thing, not fun cooking with that. And when you use a heavy cast iron skillet on electric, you've got double whammy, takes forever to heat up and slow down, nah! Sorry, it's an old way of thinking that heavy means good and sturdy. Heavy means weight lifting every night. No wonder folks dread cooking. Good means it's FUNCTIONAL, don't get me started and that's why a lot of designers and architects love my setup. They owned top of the line cookware but they didn't work. That's why it's so rewarding when folks especially chefs light up (pun, pun, ha!) when they see how fast my wok heats up in class.
